    *Portuguêse Sardine Pate

Recipe online from Be-Inspired (Roberta Muir): https://beinspired.au/portuguese-sardine-pate/  Ingredients: Sardines, butter, EVOO, smoked paprika, S&P and lemon juice I left the skin and bones in as they contain the omega-3 fatty acids. So simple and quick. Delicious.

from Modernist Cuisine: The Art and Science of Cooking by Nathan Myhrvold and Chris Young and Maxime Bilet. Baby Cucumbers, Morro white wine vinegar, filtered water, sgar, Olsson’s sea salt, black peppercorns, caraway seeds. I omitted the NovoShape® PME enzyme. (I didn’t have any, or know where to get it, or…

    Potato and Caramelised Onion Pizza

from Pizza Pizzazz by Australian Women’s Weekly  I made the Caramelised onion in the Thermomix following the quantities and time and cooking method precisely using the Thermomix recipe. It failed. I ended up having to cook the onions again to get a caramelisation. Otherwise the pizza was good. Ingredients: Caramelised onion,…

    *Testaroli con pesto

Savoury Lunigiana pancakes with pesto from Be Inspired – A Month on the Italian Riviera (Liguria): Inspired by Lucio Galletto (page 20) by Lucio Galletto and Roberta Muir. I love this pasta. Testaroli are just flour water and salt, dry fried on crepe pan, then boiled. Very simple. Pesto Genovese is…

Cold soup of cauliflower with caviar

from Tetsuya by Tetsuya Wakuda Very similar ingredients to the Thomas Kelly recipe in previous post, except no gelatine, no oyster “sauce,” and pure cream used rather than thickened cream, plus the addition of chicken stock and onion. Whilst very good, my clear preference is for the Thomas Keller version.

*Cauliflower panna cotta with beluga caviar

from The French Laundry Cookbook by Thomas Keller Delicious but presentation failed. I had to transport this and serve at a lunch. It was a hot day and the temperature melted the Panna Cotta, and attempts to reset it failed. The Panna Cotta is just cauliflower, heavy cream and gelatin. Delicious…

    Greenshell Mussels with Spaghetti

Packet Recipe (Product from Woolworths) The pasta sauce was delicious.: EVOO, garlic, chilli, white wine, parsley & Lemon The mussels not so. They were very tough and difficult to prise open further. What made the sauce so good was the trapped juice of the fresh mussels.

    *Crispy Skin Salmon

This is the best and easiest method I have come across. Heat frypan (no oil). #6/9 on Induction. Place the salmon skin side down on a baking sheet in a frypan. Place lid over the frypan. Cook for 6 minutes. (The star will cook the salmon)

    *Ham and Cheese Pinwheels

Recipe from: https://www.wellplated.com/ham-and-cheese-pinwheels/ The Puff Pastry was made using the Thermomix recipe (quite impressed by the ease of this). The Ham was Woolworths Double Smoked Shoulder Ham. Very good The Cheese was Gruyere. The recipe called for cooking at 190C for 18 minutes. After 30 minutes, I still had raw…
