Crispy skin Humpty Doo Barramundi with garlic mushrooms and creamy mash

Packet recipe. Sort of. Scan the QR code on the packet of Humpty Doo Barramundi and this was one of the options.

It was delicious! However, it used every hotplate and 4 pans.

Creamy mash: potatoes (brushed potatoes), cream (I probably added more than the recipe said, but I didn’t measure), garlic, season

Garlic mushrooms: Woolworths Exotic Stir Fry (a packet per person), butter, EVOO. Lemon zest, thyme and garlic.

Barramundi: departed from the recipe and only cooked skin side down, using the fish weight (turns out you can cook two at a time with thiner fillets put in reverse direction to hold the weight). Induction heat 7 seems to work the best.

Burnt Butter: Butter, lemon juice and parsley.
