Very simple, and very good, although my wife will probably concur with the description in the recipe “the culinary equivalent of Friar’s Balsam.” (I googled it!)
Chicken stock (I used Campbells unsalted chicken stock), Tom Yum paste (photo below), lime leaves, lime zest, lime juice, lemon-grass, fish sauce, red chillies and sugar.

Mushrooms (I used Swiss brown as there were no button mushrooms in stock), prawns and spring onions.
Topped with coriander.

Suggestions for next time:
- Served with steamed rice on the side.
- Add galangal and shallots.
