Recipe online: Baked Humpty Doo Barramundi with cherry tomatoes, hummus and tabbouli
Reasonably simple, and very tasty. Hummus could be a little thicker (use less oil) and I missed having crispy skin on the barramundi.
Hummus: can chickpeas, aquafaba (chickpea liquid), lemon juice, ground cumin, garlic, EVOO. Blended in the NutriBullet.
Roast veggies: mixed cherry tomatoes, can chickpeas, Spanish onion, garlic, lemon rind, lemon juice, EVOO
Humpty Doo Barramundi with spice rub of ground cumin, ground coriander and smoked paprika, and baked on top of partially roasted veggies.
Tabbouli: Parsley, mint, cucumber, spring onions, lemon juice, EVOO
Suggest putting the roast under the grill to crisp up the skin.
