Trial 1:



The instructions only called for one sheet of store bought filo pastry per side. I thought that was too thin. I added 3 a side. Next time I will brush each sheet with EVOO and layer them (channeling Janni). Also If I make it fresh, it is stretchable, which it needs to do to fill the voids.
Trial 2:


Opposite to what the instructions said, I laid out the filo and filling whilst the machine was cold. Added a Janni quantity of oil between the layers of filo. Otherwise same ingredients as yesterday. Results far better
Re making the stuffing, in the video where Ajoy talks about wafting. Pay attention. That is now where I add the next spice or ingredient. Forget time. Wait for the aroma.
