*Tiramisu

Ingredients: Organic Eggs (hence the more yellow colour), caster sugar, mascarpone, espresso, savoiardi (lady fingers) dipped in espresso, Donna Hay Cocoa.

This was my second attempt at Tiramisu. In my first attempt, I used the Thermomix/ Cookidoo recipe process. Whilst the ingredients were the same, the eggs were not separated. I ended up with more of a custard which whilst good was not the texture I was after, and I did not serve it.

I redid it using the recipe above where the egg yolks were whipped with the sugar and the mascarpone folded in. Eggs whites whipped separately until stiff peaks and the then folded in.
