Welsh Rarebit / Buck Rarebit

I acquired this plate from the local op shop. Recipe is on the plate:

  • grated cheese (Thomas Dux cheddar aged 12 months)
  • butter
  • flour
  • beer (Peroni)
  • Worcester sauce
  • S & P
  • Dried Mustard
  • Toasted Bread (Stonebaked sourdough)

Buck Rarebit: add poached egg

Whilst this is good / interesting, my comments:

  • it is very filling
  • it didn’t need the egg
  • it could do with a side of tomato and perhaps rocket (acid and some greens!)
  • the mustard and Worcester masked what was a very good cheddar.

In the end, I prefer the simplicity of toasted cheese on toast!
