fom Simple Italian: The Essentials of Italian Home Cooking by Silvia Colloca (p230)
- extra virgin olive oil; leek; garlic; carrot; celery;
- parmigiano rind
- pancetta (I substituted Barossa Valley ham)
- potatoes; canned chopped tomatoes;
- canned borlotti beans (I substituted black beans);
- organic Brussel sprouts, organic cavolo nero
- small pasta shapes (I used risoni)
Chilli oil to serve.
This was very good. I needed to keep adding water which made the “broth” a little bland, so I should add more water at the start than mercy covering the vegetables, but the flavours should develop over the next day or so.
Pancetta or bacon would add more flavour than the ham, and perhaps some Italian Herbs.
