Very simple, but a new method for poaching eggs. Bring the water to boil, turn off and crack the egg directly in the water and cover with a lid. Wait 3 minutes. The egg was perfect. (ps also the same method exactly in Classic Conran by Terence & Vicki Conran (page 53)
Different eggs from normal, and very good.

Smashed avocado on toasted sourdough dark rye, red onion, chilli fakes, lime, salt and coriander.

Topped with a drizzle of EVOO.

Excellant.
Version 2: Salsa Method
ie combine the avocado, chilli and coriander. This is my preference.
