A bit of twist on rocket and shaved parmesan. The parmesan is grated and blended with the EVOO and lemon juice.
There seemed to be a lot of EVOO (75ml per person). The solution would be to add more rocket. I estimate about 60g per person (half a 120g packet).
A very tasty salad.
