*Janni Kyritsis’ bacon & egg pie (Béikon kai avgópita tou Giánni)

 I think it rose well because I used a smaller container. The contents came up to where I estimated the sides would be. I had so much extra bacon that I put another layer over the eggs . The other reason is the the egg yolk sealed the cross/ hole in the centre. However there was no air under the top. Perhaps also because I kneaded the pastry (before adding the butter). Or maybe all of the above.
