I omitted the sugar, and doubled the chilli.
The dish was OK but lacking any wow flavour.
Balti curries should be cooked quickly over high heat frying lots of spices like a stir fry.
Following the Thermomix instructions and adding half the fresh coriander with the spices and onion, missed extracting the aromas of the spices. I would move the addition of the coriander to later.
I don’t understand why the instructions got you to make the paste, clean and dry the bowl, only to add back the paste with coconut milk. (I should have read ahead and skipped that step.)
I also think the whiting was the wrong fish for this dish, and white fish, or prawns would be better.
