This is very simple shepherds dish from Talana, Sardinia.
Slow roast (150C) for hour: EVOO, Zucchini, Onions (red and white), Red & Yellow capsicum, carrots, eggplant, parsley, Basel, thyme, oregano, bay leaves S &P.
Served with home made bread.
