This was super easy, quick and tasty.
The recipe called for tortilla wraps cut into triangles and then baked with canola oil and sesame seeds. I skipped the cutting up part, as I thought it would present better as pizza like.
Organic black beans squashed added to the hottest tomato salsa you can find and mozzarella, is added to the base and baked again.
Then top with fresh tomato, more hot salsa, some avocado and coriander leaves and garnish with sour cream.
It was very tasty, but improved even more by the addition of chilli powder and lime juice.
The sweet corn was just boiled for 5 minutes, and presented similar to the recipe, although it would probably present better if you took the corn off the cob and added it to the “ Mexican pizza.”
