Bacon, beans, tomato 

from Hugh’s Three Good Things…on a Plate (page 272) by Hugh Fearnley-Whittingstall

I had some leftover bacon and borlotti beans that had been soaked overnight, and this recipe came up:

  • dried beans, I used borlotti as I had then on hand, but cannellini would be better
  • smoked bacon
  • bay leaves, garlic, Mutti pasta (plus I added a fresh tomato)
  • apple juice (I omitted this as I had none on hand, and did not feel like another trip to the local store. On reflection I don’t think it needed it)
  • Hot English mustard
  • organic apple cider vinegar

Whilst this was good, I prefer the Bill Granger recipe in Everyday? In fairness it used cannellini beans and anchovies.
