from Hugh’s Three Good Things…on a Plate (page 272) by Hugh Fearnley-Whittingstall
I had some leftover bacon and borlotti beans that had been soaked overnight, and this recipe came up:
- dried beans, I used borlotti as I had then on hand, but cannellini would be better
- smoked bacon
- bay leaves, garlic, Mutti pasta (plus I added a fresh tomato)
- apple juice (I omitted this as I had none on hand, and did not feel like another trip to the local store. On reflection I don’t think it needed it)
- Hot English mustard
- organic apple cider vinegar
Whilst this was good, I prefer the Bill Granger recipe in Everyday? In fairness it used cannellini beans and anchovies.
