This was a loose adaptation of this recipe. I didn’t grind the turkey meat so, it was not a burger. A burger would have been better, but it was still good.
- Lettuce leaf
- blended chickpeas and aquafaba, garlic, lemon zest and juice
- turkey thigh meat
- avocado with coriander, mint, cumin salt and lime juice
- topped with pickled cucumbers, chilli flakes and Spanish onion
