Pea and pumpkin risotto

Simple and very tasty.

The water the Pumpkin and peas cooked in used as the stock for the risotto.

  • red onions, garlic
  • Arborio rice
  • butternut squash
  • peas (frozen)
  • dry white wine (Semillion)
  • Parmesan cheese
  • parsley

Makes far more than for 4. Forgot to add to parsley which I will do to the left overs.
