- Flat rice noodles
- Bean sprouts
- Blood cockles (No clams to be found within 5k, so I used mussels and chopped them to clam size)
- Chinese chives
- Chinese sausage (I substituted some free range Australia pork salumi chopped)
- Garlic
- Shrimp
- Egg
- Dried red chilies
- Fresh red chilies (I didn’t seed them)
- Shallots
- Oil
- Salt
Sauce:
- Soy sauce
- Dark soy sauce
- Fish sauce
- Sugar
- Salt
- Ground white pepper
No lard so I used goose fat.
Loved the dish, and went perfectly with Elizabeth Semillon 2017
