  • Flat rice noodles
  • Bean sprouts
  • Blood cockles (No clams to be found within 5k, so I used mussels and chopped them to clam size)
  • Chinese chives
  • Chinese sausage (I substituted some free range Australia pork salumi chopped)
  • Garlic
  • Shrimp
  • Egg
  • Dried red chilies
  • Fresh red chilies (I didn’t seed them)
  • Shallots
  • Oil
  • Salt

Sauce:

  • Soy sauce
  • Dark soy sauce
  • Fish sauce
  • Sugar
  • Salt
  • Ground white pepper

No lard so I used goose fat.

Loved the dish, and went perfectly with Elizabeth Semillon 2017
