Bitter melon stuffed with pork and black fungus (Canh hu qua)

  • chicken stock
  • minced pork
  • fish sauce
  • dried Chinese black mushrooms
  • bitter melons
  • fine rice vermicelli noodles
  • coriander leaves

As the stuffing makes about twice the quantity needed for the original dish, I I had lots of stuffing left over.

So ….. Wok fried stuffing with leftover rice. It was excellent!
