Ingredients
- ¼ cup vegetable oil
- 3 cloves garlic, crushed
- 1 tablespoon grated ginger
- 1 tablespoon ground coriander
- 1 teaspoon ground cumin
- 600g chicken thigh fillets (I substituted prawns and tofu)
- 1 cup (250ml) peanut sauce (homemade or Ayam satay sauce)
- ½ cup coconut milk
- 2 teaspoons sambal oelek or sambal goreng
- Salt flakes, to taste
- Lime wedges, for serving
Pineapple Salsa
- 1 Lebanese cucumber, seeded and finely diced
- 1 small red onion, finely diced
- ¼ pineapple, finely diced
- 10 mint leaves, finely shredded
