Satay Prawn & Tofu with Pineapple Salsa

Ingredients
  • ¼ cup vegetable oil
  • 3 cloves garlic, crushed
  • 1 tablespoon grated ginger
  • 1 tablespoon ground coriander
  • 1 teaspoon ground cumin
  • 600g chicken thigh fillets (I substituted prawns and tofu)
  • 1 cup (250ml) peanut sauce (homemade or Ayam satay sauce)
  • ½ cup coconut milk
  • 2 teaspoons sambal oelek or sambal goreng
  • Salt flakes, to taste 
  • Lime wedges, for serving

Pineapple Salsa

  • 1 Lebanese cucumber, seeded and finely diced
  • 1 small red onion, finely diced
  • ¼ pineapple, finely diced
  • 10 mint leaves, finely shredded
