Baked rice with mussels from Gennaro: Slow Cook Italian (page 98) by Gennaro Contaldo
This is a one pot, peasant dish from Puglia, with two main ingredients, Arborio rice and potatoes.
This version with mussels comes from Bari. Other ingredients in this version: Onion, parsley, cherry tomatoes and pecorino cheese.
Described as a type of baked risotto with a subtle seafood flavour. I found the dish a bit stodgy (perhaps why it is a good peasant dish, ie very filling).
It needs chilli!
