Risotto alle carote

Carrot risotto from The Silver Spoon (page 332) by Phaidon Press Editors and The Silver Spoon Kitchen


Baby carrots
onion
Pinot gris
risotto rice
Vegetable stock
Emmental cheese
Butter & cream

I cooked this in the Thermomix loosely following the asparagus risotto recipe. (No garlic, and using Swiss cheese and cream, and I worked out how to get the unit to stir backwards).

The flavour was just as good as the Milan version, although the Milan versions are more like a soup, which would could be achieved by adding more liquid then the rice could absorb.
