Pineapple Japonaise

Pineapple marinated in caster sugar and lemon juice.

Topped with a dressing made with tarragon vineger (I did that in the Anova infuser with just white wine vinegar and fresh French tarragon) egg and caster sugar made into a sort of a roux when slowly cooked, and when cooled folded into whipped cream, and topped with a tarragon leaf.
