Something to cook when you don’t feel like cooking, but also need to use all the products in the vegetable drawer.
This is so simple, and so good. Only additions were coconut oil, Aldi wild prawns and fresh green beens. And jasmine rice.

Previous versions of Marion’s curry I found too sweet and not enough Chilli. The new version is a big improvement.
Vegetable version:
Cleaned out of the vegetable draw: eggplant, mushroom, red cabbage, spring onion, & coconut water. Very good, and it would have been much quicker except for the potatoes need about 30 minutes to cook.
Freshly picked; potatoes, carrots, snow peas, red chilli, & thai basil.
