Dan’s favorite cream soup

Had celery and broccoli that needed to be used, and this came up on Eatyourbooks: 

“Dan’s favorite cream soup” from The Blue Zones Kitchen: 100 Recipes to Live to 100 (page 259) by Dan Buettner

It was a very comforting and quick soup.

Ingredients: EVOO, onions, celery, carrots, garlic, tarragon, bay leaves, broccoli and vegetable stock.

Sauté, simmer then blend (after removing bay leaves).

The recipe also called for “cashew cream” which I did not have time to make, so I added the cashew with the soup and blended. 

I finished with some cream (not in the recipe, but it needed to be used) and added a few cashews for crunch, and served with naan bread.
