Penne al salmone

Puglia home cooking. This is a very simple and quick dish, which is probably what inspired me to cook it.

EVOO, a shallot, smoked salmon and a splash off white wine, creme fraiche and some parsley add cooked pasta and your done.

Whilst it was good, it was rather one dimensional, which inspired me to look for other versions. The Silver Spoon variations skip the shallot (which I did not think added anything) and used thick/double cream and lemon instead of cream fraiche. Will try that next. Found a Puglia wine in the cellar.
