Miso Glazed Eggplant

This one was also about the Miso. I used Red Miso for this, but you can use either or both. Red gives it more a gamey flavour.

Very simple and delicious. 

Small eggplants halved and scored. 
Fried skin side down first, 
then the scored side (but with the lid on to let it steam).

Then coat the scored side with a combination of miso, mirin and sake and grill.

Serve with sesame seeds and spring onion tops.
