*Filej with hot-smoked salmon, leeks and baby spinach

  • sour cream
  • filej pasta (sic Fileja) (I substituted Casarecce)
  • baby spinach
  • leeks
  • hot-smoked salmon (I substituted ocean trout)

Simple, quick and delicious.

I substituted Caserecce for the Fileja which share similar features, and the ocean trout for the salmon.

Fry sliced garlic in EVOO, 
add rounds of leek and cook slowly until slightly brown and very soft
add white wine and reduce
Add sour cream, S & P
Toss in the cooked pasta, the hot smoked trout and the baby spinach and serve.
