Cream of Mushroom Soup Pie

Shortcrust pastry bottoms and puff pastry tops.

Pre cook – Mushroom Soup Filling: EVOO, Onion, butter, small button mushrooms, thyme leaves, garlic and cream of mushroom soup.

The “M “on the top was suggested in the recipe but I found that the pastry did not cook well between the letters. Next time I will try rolling the pastry for the letters very thin.

Whilst the button mushrooms were good, perhaps using field mushrooms would be better, or better still, Charlie Trotter’s Wild Mushroom Ragout with Chicken Stock Reduction.
