Anzac Biscuits

Anzac Biscuits

from Country Women’s Association Classics: Over 400 Favourite Recipes (page 569) by Country Women’s Association of Australia

  • rolled oats, desiccated coconut, unrefined sugar, salt
  • boiling water, butter, golden syrup, and bicarbonate soda

Simple, quick and addictive. Salty caramel flavour.

I found it easier to press the contents into a food mould, rather than try and shape the biscuit.

Last year I made the below version with treacle (which resulted in a darker biscuit)

  •   Caster sugar
  •   Treacle
  •   Butter
  •   Baking soda
  •   Coconut, flaked
  •   Oatmeal
  •    Plain flour
  •    Boiling water

A lot darker than I remember from my youth.
