Spaghettini with hot-smoked salmon and vegetables (Spaghettini con salsa di salmone affumicato)

Very quick and simple.

Leek, organic carrot and organic zucchini quickly fried in EVOO.

I used the smallest setting on the spiraliser for the carrot and zucchini.

Add cherry tomatoes and white wine (I used Clare Valley riesling).

Take off the heat and add (Norwegian) hot smoked salmon parsley and cooked spaghettini.

Good, and probably healthy!
