Bulgur with tomato, aubergine and lemon yoghurt

  • Greek yoghurt
  • cherry tomatoes
  • aubergines
  • mint
  • bulgur wheat
  • onions
  • preserved lemons
  • tomato paste

Very good, although the bulgur wheat needed more liquid, so I added some boiling water.
