Halloumi skewers and cauliflower tabbouleh with pistachios

This was very good;

  • grated florets of cauliflower and put the stems in the Nutri bullet
  • lemon
  • EVOO
  • pepper
  • tomatoes
  • mint
  • parsley
  • pistachios
  • spring onions

Sauce

  • seared tomatoes
  • yoghurt
  • sambal oelek
  • ground cumin
  • black pepper

The recipe was meant to serve 4, it probably could serve 3, but 220g of Halloumi nearly serves 2!
