Thai yellow pumpkin and seafood curry

Easy, quick and very good.

Basically just store bought yellow curry paste fried in coconut milk, add the aromatics/ spices (lime leaves, lemongrass, fish sauce, turmeric).
Cook the pumpkin in the sauce, and then throw in the prawns and salmon, and green veggies (I just used the asian greens that had self sown in the garden)

Top with lime juice and coriander leaves. I served it with Black Rice
