Ingredients: equal parts 00 flour and semolina flour; salt and lukewarm water.

Another simple process, and you don’t need a pasta machine to make them, but it is time consuming. I can understand why the Italian Nonnas spend their afternoon making them. A wooden board is a must so that the dough grips (ie the silicone matt did not work, but it was useful to put the finish product on).
