Mushroom and thyme risoni

from Two’s Cooking (page 68) by Jeremy Strode and Jane Strode

(Risoni is pasta made in the shape of rice)

Ingredients: EVOO, Spanish onions, garlic, large field mushrooms, thyme, bay leaf, risoni, chicken stock, flat leaf parsley and pecorino

Served with a few green salad leaves dressed with EVOO.

Simple, flavoursome, but a slow cook dish.
